Cape Fear got its name from sailors afraid of getting wrecked. Apropos for a spirit, no? Cape Fear Distillery carries on that tradition by creating award-winning spirits like our 6-times gold medal-winning rum, a delicately balanced palate pleaser with notes of butterscotch and coconut.
But then we decided to make a rum with more bite, more spice. So, we reached out to the folks at the Calcutta brand, a team known for getting and keeping big bites for big boats in the offshore fishing game, to get a bare bones take. The result, a series of boldly flavored rums that bite back with flavors that never get lost in the stormy seas of your mixology choices.

To produce this wonderful blue agave tequila, Cape Fear Distillery partnered with one of the oldest tequila distilleries in Mexico. Our special production technique requires the agave pinas to be trimmed close to the heart with little green leafy exposure, eliminating waxy texture and ensuring cleaner distillation. The agave is then cooked slowly in centuries-old stone brick ovens to retain its sweet, natural, mellow flavors. After shredding the agave juice is fermented for 48-60 hours (mass produced tequilas are fermented only 10-12 hours) to produce a full-bodied flavor. Finally, the agave juice is twice-distilled in alembic "pot stills," eliminating volatile alcohols and enriching the ABV content to 55% before bottling. iSalud!

Solera Whiskey

Our arduous Solera aging process began in 2015 with vertical tiers of three charred oak whiskey barrels. In the Solera method, after one year, half of the contents of the bottom barrels are removed, bottled and replaced with aged whiskey from the barrels immediately above, which are then topped off with half of the contents of the top barrels. New whiskey is then added only to the top barrels. This cascading continues and only the oldest whiskey from the bottom “ground” barrels, or Solera, is bottled.
In 2021, we’re proud to release this wonderfully smooth and consistently complex Solera 2015 whiskey, a product of our deliberate five-year aging process. We believe you’ll find this very rare whiskey delightful to taste, and filled with the love that can only be brought to you by a small batch distillery like Cape Fear Distillery!
